- Beans - Cannellini beans are great, but butter beans or chickpeas also work well. - Tomatoes - use a good-quality tin of tomatoes, or stir in a spoon of tomato paste for extra richness. - Spinach - Fresh or frozen spinach both work. If using frozen, defrost and squeeze out excess water before adding. - Make Ahead - Keeps well in the fridge for 2–3 days and reheats easily in a pan or microwave. - Serving Suggestion - Serve with toasted pitta, flatbread, or sourdough.
