  • Use a high-protein Greek yoghurt or skyr to increase the protein content.

  • Vanilla protein powder works especially well with the pistachio flavour, but you can use your favourite.

  • If the mixture is too thick, add a splash of milk and mix until smooth.

  • Add crushed pistachios for extra crunch, or top with fresh berries, white chocolate or coconut.

  • This can be prepared in advance and stored covered in the fridge for up to 2 days.

  • Use a lower-fat yoghurt and reduce the amount of pistachio spread while keeping the protein powder for a higher-protein, lower-calorie option.
